The outside covering of nutmeg. Pungent like nutmeg but with a sweeter flavor mace can be used as a substitute for nutmeg when the dark flecks of nutmeg are undesirable. Use in hot drinks and baked sweet dishes, but also good with meat, eggs and in sauces. For richest flavor to develop, use this spice in the start of cooking process. Kosher. NON IRRADIATED.
