Saba can be used as a condiment with beans or polenta, drizzled over granita or ice cream, added to yogurt, brushed on grilled or broiled meats and sweet vegetables such as carrots or squash, and sprinkled over desserts such as pears or apples. Saba is produced by slowly cooking grapes and grape juice into a thickened, very sweet, concentrated syrup. It is the initial step in the process that creates balsamic vinegar. In Italy, Saba is also extremely popular as a sweetener in cooking and baking.
